Tomato and Burrata Salad with Broad Bean Salsa

Ingredients

500g colourful tomatoes
200g podded broad beans
400g of mixed fresh herbs
(I like basil, chives, parsley and mint)
50ml olive oil
30g Dijon mustard
1 lemon
1 tbsp red wine vinegar
2 burrata balls
50g pistachio, roughly chopped

Steps

1. Chop the tomatoes into a mixture of slices and wedges, then put them in a bowl with the sugar and seasoning. Mix and leave to marinade.

2. Bring a large pan of salted water to the boil. Add the broad beans and cook for two minutes, drain and blanch in cold water. Peel the shells.

3. Finely chop the herbs, then place in a bowl with the olive oil, mustard, zest of the lemon, seasoning and red wine vinegar. Then stir through the broad beans.
