Grilled Courgettes with Ricotta, crushed Hazelnuts and Honey By Georgia Hearn
Ingredients
4 Courgettes
20g thyme springs
40g crushed toasted hazelnuts
Zest of 1 lemon
60g ricotta
Honey, for drizzling
Steps
1. Simply slice your courgettes lengthways and coat in olive oil and seasoning.
2. Grill them for a couple of minutes eah side of the BBQ or in a pan.
3. Once cooked, transfer to a serviing plate and top with thyme, spoonful's of ricotta, crushed hazelnuts, grated lemon zest, a drizzle of honey and seasoning.
