Spring Onion Potato Cakes with Bacon By Georgia Hearn

Serves 4
Ingredients
300g mashed potato
100g flour
2 tsps of bicarbonate soda
2 eggs
100ml milk
1 pack of finely chopped spring onions
Sunflower oil, to fry
Crispy streaky bacon and sour cream to serve
Steps
1. Place the mash potato, bicarbonate soda, flour, eggs, milk and seasoning in a bowl and mix till smooth.
2. Next add half the spring onion and stir through.
3. Heat a non-stick pan with a drizzle of sunflower oil. Once piping hot, add a tbsp of the batter for each cake. Cook for 2 minutes, or till bubbling on top, and flip. Cook the other side till golden brown and crispy.
4. Serve hot with sour cream, crispy bacon and leftover spring onions.
