Serves: 4
Ingredients
600g shredded leftover lamb, at room temperature
4 wraps
4 tbsps homemade hummus
1 cucumber, finely diced
200g cherry tomatoes, finely diced
1 red onion, finely chopped
100g pomegranate seeds
30g mint and 30g parsley, finely chopped
Juice of 2 lemons
Steps
1. Start by placing the cucumber, tomatoes, red onion, pomegranate seeds, mint, parsley, lemon juice, 2 tbsps of olive oil and a pinch of salt in a mixing bowl. Stir it all together and leave to one side.
2. Next, warm the wraps through.
3. Time to plate up! Spread a tbsp of hummus on each wrap. Top with a quarter of the shredded lamb and pomegranate salad – you are ready to go.
