1 courgette, halved lengthways and cut into chunksSteps
1. Start by preheating oven to 200 degrees. Place courgette pieces on a tray with lemon juice, drizzle of olive oil and seasoning. Roast for 20 minutes till crispy and golden brown.
2. Once the courgette is cooked and cooling, lay the halloumi on a baking tray and place under the drill for around 5 minutes each side. Keep and eye though so golden brown and not burnt. Once both sides are cooked, place in a bowl with the honey and thyme and mix it all together.
3. Whilst the halloumi grills, place the orzo, red pepper, tomatoes and chopped parsley in a brown and add the cooked courgette. Drizzle with olive oil and season.
4. Serve the sticky hot honey halloumi with the delicious roasted veg salad, pitta chips and extra chopped parsley for garnish.
