Honey and Thyme Halloumi with Roasted Vegetable Orzo

Ingredients

1 courgette, halved lengthways and cut into chunks
Juice of 1 lemon, olive oil and salt
1 block of halloumi, cut into 8 slices
4 tbsps honey
20g thyme, stalks removed
100g orzo, cooked in chicken stock till al dente
120g roasted red peppers, roughly chopped
100g cherry tomatoes, quartered
30g finely chopped parsley
Pitta chips, chopped parsley and drizzle of XV olive oil to garnish

Steps

1. Start by preheating oven to 200 degrees. Place courgette pieces on a tray with lemon juice, drizzle of olive oil and seasoning. Roast for 20 minutes till crispy and golden brown.

2. Once the courgette is cooked and cooling, lay the halloumi on a baking tray and place under the drill for around 5 minutes each side. Keep and eye though so golden brown and not burnt. Once both sides are cooked, place in a bowl with the honey and thyme and mix it all together.

3. Whilst the halloumi grills, place the orzo, red pepper, tomatoes and chopped parsley in a brown and add the cooked courgette. Drizzle with olive oil and season.

4. Serve the sticky hot honey halloumi with the delicious roasted veg salad, pitta chips and extra chopped parsley for garnish.
